This bet exists because NYC just did the improbable twice in a row: Jungsik became the first Korean restaurant in the US to hit three stars in December 2024, then Sushi Sho got bumped from two to three in the 2025 guide. Before that streak, new NYC three-stars were roughly once-a-decade events — the 2020 guide added zero — so 18% is basically the market pricing the long-run drought against the recent hot streak.
Structurally, this is a one-night market: nothing can happen until the ceremony on Dec. 14 at the Glasshouse in Manhattan — hometown crowd, 17 days before close, and Michelin loves a headline promotion at home. The comedy angle is Atomix: it's been ranked North America's best restaurant on World's 50 Best, with annual buzz about a third star that never comes — the Susan Lucci of tasting menus.
Wildcard: Michelin also takes stars away — Masa just got demoted to two — so "new three-star" cuts both ways narratively. No case until December; then it's binary.
